Grape variety: Pinot Nero, a grape originating from Burgundy that found the ideal soil and climatic conditions in Trentino.
Vineyards: located on the best exposed hills of the Valle dei Laghi, with an airy climate and a perfect temperature range between day and night, at an altitude between 400 and 600 meters above sea level.
Vinification & Aging: after the vinification and refinement of the sparkling wine base until the spring following the harvest, we proceed with the draft in the bottle. The second fermentation in the bottle starts in a short time and a long period of maturation on the yeasts which lasts for over 40 months. Slight movements of the bottle allow the yeasts to interact better with the other components, giving the wine unique characteristics. Finally, disgorgement and subsequent dosage are carried out to enhance the elegance of these Trento Doc rosé mountain bubbles.

Organoleptic Characteristics: a deep antique pink color, a very fine and persistent perlage, typical of the best vintage wines (from grapes from the indicated vintage). On the nose, it is pleasantly fruity with hints of small ripe fruits, a floral bouquet with notes of rose hips. Antares Rosé Trento Doc Millesimato has an excellent structure, but at the same time it is fresh, slightly acidic and savory with an excellent persistence in the mouth.
Tasting & Pairing: to be served in large bubbly glasses at a temperature of 6-8°C. Antares Rosé Trento Doc Millesimato is an excellent aperitif, but it is also perfect for the whole meal, especially appetizers, fresh cheeses and cold cuts, but also soups and main dishes based on white meats. Preferably to be consumed within a few years of disgorgement.
