TRENTINO DOC Grape variety: Sauvignon Blanc, classic white grape variety originating from the Bordeaux region. Vineyards: coming from the vineyards of the Az Agr Toblino - Bio Certificata which benefit from a ventilated climate, good exposure and a perfect temperature range during the harvest in order to best express the unique characteristics of this variety. Vinification & Aging: after crushing-destemming, cold maceration takes place to facilitate the extraction of aromas and fermentation at a controlled temperature. A brief refinement of a few months in steel follows.​​​​​​​ Organoleptic Characteristics: intense straw yellow color with slight greenish nuances.On the nose, it is powerful with aromatic notes reminiscent of elder, elderflower, fig leaf and sweet peppers.On the palate, Sauvignon Blanc is dry, pleasantly fresh and full-bodied. ​​​​​​​Tasting & Pairing: to be served in medium-sized glasses at 8-10 ° C.Sauvignon Blanc is a classic aperitif wine, but at its best when served with fish, eggs and asparagus.

PINOT GRIGIO BIO

TRENTINO DOC Grape variety: Pinot Grigio is a white grape with a characteristic coppery color, locally known as Rulander. Vineyards: from the vineyards of the Az Agr Toblino - Bio Certificata located between Sarche and Pietramurata, characterized by well-drained, dry soils and a cool climate that allows the grapes to ripen perfectly. Vinification & Aging: after crushing-destemming, the typical white vinification takes place with soft pressing of the grapes and fermentation at a controlled temperature. A few months of aging in stainless steel follow.​​​​​​​ Organoleptic Characteristics: straw yellow color with coppery nuances.On the nose, it is graceful and slightly fruity with aromas of Williams pear and yellow plum.Structured but discreet on the palate, elegant with pleasant acidity that leaves a clean and fresh feeling in the mouth. ​​​​​​​Tasting & Pairing: to be served in medium-sized glasses at 8-10 ° C.Pinot Grigio is very versatile in pairings, to be successfully paired with fish, but also white meat, poultry and cheese.

NOSIOLA

VIGNETI DELLE DOLOMITI IGT Grape variety: Nosiola is the only indigenous white grape variety of Trentino, used to produce dry white wines and the sought-after "Passito dei Passito", or Vino Santo Trentino DOC. ​​​​​​​Vineyards: the grapes grow among the best exposed vineyards of the Valle dei Laghi near Castel Toblino. The unique composition of the soils, dry and rich in gravel, together with the incessant presence of a gentle wind, called "Ora del Garda", contribute to giving these grapes unique and inimitable characteristics. Vinification & Aging: after crushing and destemming, the traditional white vinification takes place with soft pressing, short cold maceration on the skins and fermentation at a controlled temperature. A few months of aging in stainless steel follow.​​​​​​​ Organoleptic Characteristics: a straw yellow tenure with distinctive greenish nuances. La Nosiola has a delicate fruity aroma with a soft memory of freshly picked hazelnuts. Dry and pleasantly fresh on the palate, with a slight aromatic note. Tasting & Pairing: due to its delicate structure, the Nosiola should be tasted when still young at a temperature of 8-10 ° C in medium-sized glasses. Always perfect as an aperitif and accompanied with freshwater fish, vegetables and white meats.

MÜLLER THURGAU BIO

TRENTINO DOC     Vitigno Il Müller Thurgau è stato ottenuto nel 1882 dal ricercatore svizzero Hermann Müller, originario del cantone “Thurgau”, dall’incrocio di Riesling Renano e Chasselas.   Vigneti perfette condizioni pedo-climatiche, posizione dei vigneti biologici sulle colline e le montagne della Valle di Cavedine, del Bleggio e vicino a Stenico, sono il segreto dell’aroma e dell’eleganza di questo Müller Thurgau. Solo in queste aree il clima fresco e l’ampia escursione termica consentono la miglior espressione delle caratteristiche varietali di questo vino. Annata: 2021   Vinificazione & Affinamento Dopo la pigia-diraspatura, si svolge la pressatura soffice con macerazione a freddo che garantisce la miglior estrazione degli aromi, a cui segue la fermentazione a temperatura controllata. Segue un affinamento di alcuni mesi in acciaio.   Caratteristiche Organolettiche Colore giallo paglierino tenue con distintive sfumature verdoline. Al naso, il Müller Thurgau esprime sensazioni intense ed eleganti, tipiche di questa varietà, con note piacevolmente aromatiche. Al palato, si presenta secco e fresco con un finale abbastanza lungo. Degustazione e abbinamenti Da servire ancora giovane ad una temperatura di 8-10°C in calici di media ampiezza. Aromatico e fresco, si accompagna perfettamente a formaggi freschi e piatti di pesce, specialmente crostacei e molluschi. Da provare anche come aperitivo.
