TRENTINO DOC Grape variety: Chardonnay, classic white grape variety originating from Burgundy and widely used in Trentino for the production of extraordinary white wines and sparkling wines. Vineyards: the grapes of this Chardonnay come from the best exposed vineyards of the Az Agr Toblino - Bio Cerificate in Valle dei Laghi, where it is easily adapted to the superb climate of this area at the beginning of the twentieth century. Vinification & Refining: shortly after the crushing-destemming we proceed with a short cold maceration on the skins. Subsequently, soft pressing and fermentation at controlled temperature takes place, followed by a few months of aging in steel and a small part in oak barrels. Organoleptic Characteristics: a deep straw yellow with slight greenish nuances. On the nose, intensely perfumed, fragrant and fruity with flavors of golden apple and banana with a slight mineral note. On the palate, dry, pleasantly fresh, well balanced and with good persistence. Tasting & Pairing: to be served in medium-sized glasses at a temperature of 8-10 ° C. Perfect as an aperitif or to accompany fish, traditional and creative pasta dishes, vegetable-based dishes.
TRENTINO DOC Grape variety: Gewürztraminer, aromatic white berry vine born in the area around Termeno. A peel of color between antique pink and coppery, a trait of uniqueness that distinguishes these grapes from all the others. Vineyards: from the vineyards located on the best exposed hills of the Valle dei Laghi belonging to the Az Agr Toblino - Bio Certificata.Thanks to an airy climate and a wide temperature range during the harvest period, perfectly ripe grapes are obtained which guarantee the best expression of the aromas and delicate characteristics of the Gewürztraminer. Vinification & Aging: shortly after the crushing-destemming we proceed with the soft pressing with cold maceration on the skins which guarantees the best extraction of aromas and color. Subsequently, the fermentation takes place at a controlled temperature, followed by a prolonged aging in steel. Organoleptic Characteristics: a brilliant straw yellow color with golden reflections.Intensely aromatic, fine, persistent, spicy with flavors of grapefruit and ripe peaches that complete the classic notes of wild rose, white flowers and honey.On the palate, it is soft, well balanced with an excellent aromatic persistence. Tasting & Pairing: to be served in large glasses at a temperature of 8-10 ° C.Pleasant as an aperitif, it is perfect with molluscs and crustaceans, liver, flavored cheeses and slightly spicy dishes.Its structure allows aging of up to 2 or 3 years.
TRENTINO DOC Grape variety: Kerner, a white grape variety obtained from the crossing of Trollinger (Schiava) and Riesling Renano. Vineyards: mountain grapes by definition, Kerner is produced in the Bleggio area, where the vineyards can reach altitudes of 750 meters above sea level and the grapes can best express the character of this variety, giving the wine great finesse, complexity and a unique structure. Vinification & Aging: after crushing-destemming the traditional white vinification takes place with cold maceration in contact with the skins, followed by fermentation at a controlled temperature. A prolonged aging in stainles steel follows. Organoleptic Characteristics: bright straw yellow color. On the nose, the Kerner offers a wide and seductive bouquet with notes of fresh fruit and nuances reminiscent of aromatic herbs. On the palate, this wine expresses good power and density, it is thin, with a good aromatic and mineral persistence. Tasting & Pairing: best served at 8-10 ° C in large glasses. Perfect as an aperitif and extremely versatile in combination with food, above all thanks to its structure which makes it ideal to accompany tasty fish dishes, white meats, cold cuts and mature cheeses.
VIGNETI DELLE DOLOMITI IGT Grape variety: Nosiola is the only indigenous white grape variety of Trentino, used to produce dry white wines and the sought-after "Passito dei Passito", or Vino Santo Trentino DOC. Vineyards: the grapes grow among the best exposed vineyards of the Valle dei Laghi near Castel Toblino. The unique composition of the soils, dry and rich in gravel, together with the incessant presence of a gentle wind, called "Ora del Garda", contribute to giving these grapes unique and inimitable characteristics. Vinification & Aging: after crushing and destemming, the traditional white vinification takes place with soft pressing, short cold maceration on the skins and fermentation at a controlled temperature. A few months of aging in stainless steel follow. Organoleptic Characteristics: a straw yellow tenure with distinctive greenish nuances. La Nosiola has a delicate fruity aroma with a soft memory of freshly picked hazelnuts. Dry and pleasantly fresh on the palate, with a slight aromatic note. Tasting & Pairing: due to its delicate structure, the Nosiola should be tasted when still young at a temperature of 8-10 ° C in medium-sized glasses. Always perfect as an aperitif and accompanied with freshwater fish, vegetables and white meats.
PINOT GRIGIO BIO
TRENTINO DOC Grape variety: Pinot Grigio is a white grape with a characteristic coppery color, locally known as Rulander. Vineyards: from the vineyards of the Az Agr Toblino - Bio Certificata located between Sarche and Pietramurata, characterized by well-drained, dry soils and a cool climate that allows the grapes to ripen perfectly. Vinification & Aging: after crushing-destemming, the typical white vinification takes place with soft pressing of the grapes and fermentation at a controlled temperature. A few months of aging in stainless steel follow. Organoleptic Characteristics: straw yellow color with coppery nuances.On the nose, it is graceful and slightly fruity with aromas of Williams pear and yellow plum.Structured but discreet on the palate, elegant with pleasant acidity that leaves a clean and fresh feeling in the mouth. Tasting & Pairing: to be served in medium-sized glasses at 8-10 ° C.Pinot Grigio is very versatile in pairings, to be successfully paired with fish, but also white meat, poultry and cheese.

Vineyards: coming from the vineyards of the Az Agr Toblino - Bio Certificata which benefit from a ventilated climate, good exposure and a perfect temperature range during the harvest in order to best express the unique characteristics of this variety. Vinification & Aging: after crushing-destemming, cold maceration takes place to facilitate the extraction of aromas and fermentation at a controlled temperature. A brief refinement of a few months in steel follows. Organoleptic Characteristics: intense straw yellow color with slight greenish nuances.On the nose, it is powerful with aromatic notes reminiscent of elder, elderflower, fig leaf and sweet peppers.On the palate, Sauvignon Blanc is dry, pleasantly fresh and full-bodied. Tasting & Pairing: to be served in medium-sized glasses at 8-10 ° C.Sauvignon Blanc is a classic aperitif wine, but at its best when served with fish, eggs and asparagus.
MÜLLER THURGAU BIO
TRENTINO DOC Vitigno Il Müller Thurgau è stato ottenuto nel 1882 dal ricercatore svizzero Hermann Müller, originario del cantone “Thurgau”, dall’incrocio di Riesling Renano e Chasselas. Vigneti perfette condizioni pedo-climatiche, posizione dei vigneti biologici sulle colline e le montagne della Valle di Cavedine, del Bleggio e vicino a Stenico, sono il segreto dell’aroma e dell’eleganza di questo Müller Thurgau. Solo in queste aree il clima fresco e l’ampia escursione termica consentono la miglior espressione delle caratteristiche varietali di questo vino. Vinificazione & Affinamento Dopo la pigia-diraspatura, si svolge la pressatura soffice con macerazione a freddo che garantisce la miglior estrazione degli aromi, a cui segue la fermentazione a temperatura controllata. Segue un affinamento di alcuni mesi in acciaio. Caratteristiche Organolettiche Colore giallo paglierino tenue con distintive sfumature verdoline. Al naso, il Müller Thurgau esprime sensazioni intense ed eleganti, tipiche di questa varietà, con note piacevolmente aromatiche. Al palato, si presenta secco e fresco con un finale abbastanza lungo. Degustazione e abbinamenti Da servire ancora giovane ad una temperatura di 8-10°C in calici di media ampiezza. Aromatico e fresco, si accompagna perfettamente a formaggi freschi e piatti di pesce, specialmente crostacei e molluschi. Da provare anche come aperitivo.
